This is a dish that supposedly originated at Alnwick Castle , home of the Percy family, Dukes of Northumberland since time immemorial, and excitingly these days one of the locations for the filming of the Harry Potter series. Maybe telling kids that will get them to try it.
Alnwick stew is a good hearty dish, very simple, with just a handful of ingredients. Gammon or ham is cubed and placed in a layer in a cooking pot, followed by a layer of sliced onion, then a layer of sliced spuds, with plenty of mustard powder, salt and pepper to season it, and a bay leaf if you fancy. This construction is repeated, the whole moistened with stock or water, then brought to the boil and simmered very gently till done - this being pork make sure the meat is properly cooked though.
