The modern decor helps, all right, as does the location and the spiffy staff, but he is using all his expertise to create stunning modern cuisine that incorporates the best of Scottish raw materials. Try starter of Loch Fyne smoked salmon with lemon and capers, then main course of new season roast chump of lamb with chorizo ratatouille and confit new potatoes, and pudding of pecan and toffee tart with creme fraiche.
